Cream And Onion Chakli Sticks

An anytime snack that can be enjoyed by young and old alike. Chaklis are usually made in spiral shape but it can be given any other shape like sticks. Traditionally it is made with rice flour and urad dal flour but here we have used semolina also. After deep-frying the sticks are rolled in cheese powder, onion powder, milk powder, sugar and salt to give it extra flavour.

Ingredients

  • 1½ tablespoons milk powder
  • 2 teaspoons onion powder
  • 1 cup semolina (rawa) 
  • Salt to taste
  • 1½ tablespoons butter
  • ¾ cup rice flour
  • 2 tablespoons parmesan cheese powder
  • ½ teaspoon castor sugar
  • Oil for deep frying

Method

  1. Bring 1 cup water and salt to a boil in a deep pan. Add butter and let it melt. Add semolina and mix till well combined. Cover and cook on low heat for 5 minutes. 
  2. Transfer the semolina mixture onto a large plate and allow to cool down to room temperature. Sprinkle ½ cup water and knead to a soft dough. 
  3. To make the spice mix, combine parmesan cheese powder, onion powder, castor sugar, salt and milk powder in a small bowl.
  4. Transfer some of the semolina mixture into a greased chakli press. Press in chakli sticks on a parchment paper. 
  5. Heat sufficient oil in a kadai. Gently slide in the chakli sticks a few at a time and deep-fry till golden and crisp. Drain on absorbent paper. 
  6. Transfer the chakli sticks into a bowl, sprinkle some of the spice mix and mix gently till each chakli stick is coated with the spice mix.
  7. Arrange in a serving bowl. Serve.
