Fruit Pani Puri

Pani puri or golgappa or puchka as it called in different states is one of the most popular street foods. Puffed crisp puris are stuffed with a masaledar mixture, then filled with a spicy flavoured water and served. The spicy water is usually made of tamarind or fresh mint but here we have created several fruit flavoured waters that are sure to win your taste buds and your hearts.

Ingredients

  • Puffed puris as required
  • Chatpata cranberry
  • 1½ cups cranberry juice
  • 2 tablespoons coriander-mint-green chilli paste
  • ½ teaspoon roasted cumin powder
  • Black salt to taste
  • 1 tablespoon pani puri masala 
  • 6-8 ice cubes
  • 1 teaspoon lemon juice
  • 2 tablespoons fresh pomegranate pearls
  • Tangy orange
  • 1½ cups orange juice
  • ½ teaspoon roasted cumin powder
  • Black salt to taste
  • ½ tablespoon pani puri masala
  • 6-8 fresh mint leaves, finely shredded 
  • ¼ teaspoon red chilli powder
  • 5-6 ice cubes
  • Sweet and spicy pineapple
  • 1½ cups pineapple juice
  • 2 tablespoons grilled and chopped pineapple pieces
  • ¼ teaspoon roasted cumin powder
  • Black salt to taste
  • ½ tablespoon pani puri masala
  • ¼ teaspoon red chilli powder
  • 1 tablespoon lemon juice
  • 5-6 ice cubes
  • Masaledar guava
  • 1½ cups guava juice
  • ½ teaspoon roasted cumin powder
  • Black salt to taste
  • ½ tablespoon pani puri masala
  • ½ teaspoon red chilli powder
  • 1 teaspoon lemon juice
  • 5-6 fresh mint leaves, finely shredded
  • 2 tablespoons finely chopped guava 
  • 5-6 ice cubes
  • Kiwi kairi masti
  • ¼ cup kiwi crush
  • ¼ teaspoon roasted cumin powder
  • Salt to taste
  • ½ teaspoon chaat masala
  • 2 tablespoons finely chopped raw mango (kairi)
  • 5-6 ice cubes
  • 1 tablespoon coriander-mint-green chillies paste
  • Stuffing 
  • 1 large potato, boiled, peeled and cut into ½ inch cubes
  • 1 tablespoon fresh pomegranate pearls
  • ¼ cup boiled and crushed sweet corn kernels
  • 1 tablespoon chopped raw mango
  • 1 tablespoon chopped fresh coriander leaves
  • 1 tablespoon chopped fresh mint leaves
  • Black salt to taste
  • ½ teaspoon chaat masala
  • ¼ teaspoon red chilli powder
  • 1 teaspoon lemon juice

Method

  1. To make chatpata cranberry, pour cranberry juice into a large bowl. Add coriander-mint-green chilli paste, black salt, pani puri masala, ice cubes, lemon juice and fresh pomegranate pearls and mix till well combined. 
  2. To make tangy orange, take orange juice in another large bowl. Add roasted cumin powder, black salt, pani puri masala, mint leaves, red chilli powder and ice cubes and mix well.
  3. To make sweet and spicy pineapple, mix together pineapple juice, grilled pineapple, roasted cumin powder, black salt, pani puri masala, red chilli powder, lemon juice and ice cubes in yet another large bowl.
  4. To make the masaledar guava, take guava juice in another large bowl. Add roasted cumin powder, black salt, pani puri masala, red chilli powder, lemon juice, mint leaves, chopped guava and ice cubes and mix well. 
  5. Lastly, to make kiwi kairi masti, take kiwi crush in yet another large bowl. Add 1½ cups water, roasted cumin powder, salt to taste, chaat masala, raw mango, ice cubes, and coriander-mint-green chilli paste and mix well.
  6. To make the stuffing, take potato in a bowl. Add fresh pomegranate pearls, sweet corn, raw mango, coriander leaves, mint leaves, black salt, chaat masala, red chilli powder and lemon juice and mix till well combined. 
  7. Slightly break the top of the puffed puris, stuff them with the potato mixture and arrange them in a large serving platter.
  8. Transfer the prepared fruit flavoured pani into individual serving bowls. Serve immediately with the stuffed puris.
