Fugias

Fugias are little leavened batter dumplings deep-fried to a golden goodness. These are popular among the East Indians and Goans are a definite part of their festive menu. Served with a spicy curry they make for a most amazing meal.

Ingredients

  • 1½ cups refined flour (maida)
  • ½ cup whole wheat flour (atta)
  • 2 eggs
  • 1½ tablespoons melted ghee
  • ¼ cup sugar
  • Salt to taste
  • 4 tablespoons coconut milk
  • 1 teaspoon instant yeast
  • Oil for deep frying

Method

  1. Sift refined flour and whole wheat flour in a bowl.
  2. Break eggs in another bowl and whisk well.  Add ghee, sugar, salt, coconut milk and instant yeast and mix well.
  3. Add this mixture to the flour mixture. Add ¾ cup water and mix well. Cover with the lid and set aside to ferment for 4-6 hours.
  4. Heat sufficient oil in a kadai. Drop small portions of the batter and deep fry till golden brown and crisp. Drain on absorbent paper.
  5. Transfer them into a serving bowl and serve hot.
