Gobhi Masala

Cauliflower is a well-liked vegetable and can be cooked in various ways. With or without a lot of masalas it tastes just as good with a unique flavour of its own. When it is cooked in this way, it will make a good accompaniment with rotis or paranthas.

Gobhi Masala

Ingredients

  • 300 grams cauliflower (gobhi), cut into large florets
  • 1½ tablespoons ghee
  • 1 teaspoon cumin seeds
  • 1 medium onion, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1 cup tomato puree
  • Salt to taste
  • 1 teaspoon coriander powder
  • ½ teaspoon cumin powder
  • ½ teaspoon red chilli powder
  • ¼ teaspoon turmeric powder
  • 2 teaspoons cashewnut paste
  • 1 teaspoon dried fenugreek leaves (kasuri methi)
  • A pinch of garam masala powder
  • 2 tablespoons chopped fresh coriander leaves
  • 1 tablespoon fresh cream
  • Fresh coriander sprig for garnish

Method

  1. Heat ghee in a non-stick kadai, add cumin seeds and saute till their colour changes.
  2. Add onion, mix and sauté till golden brown. Add ginger-garlic paste, mix and sauté for 1 minute. Add tomato puree and salt and mix well. Cook till the oil separates.
  3. Add coriander powder, cumin powder, red chilli powder and turmeric powder, mix and sauté for 1 minute.
  4. Add cauliflower and mix well. Add 1 cup water, mix, cover and cook for 10-12 minutes.  
  5. Add cashewnut paste and dried fenugreek leaves and mix well.
  6. Add garam masala powder, coriander leaves and fresh cream and mix.
  7. Transfer into a serving bowl, garnish with coriander sprig and serve hot.
