Green Garlic Shakshuka

Shakshuka is a simple dish that is said to have originated in Tunisia. Traditionally it has eggs gently poached eggs in a delicious chunky tomato and bell pepper sauce. But here we bring you this dish made with a twist. We have cooked the eggs in herby sauce made of fresh green garlic and a few spices.

Ingredients

1 medium bunch green garlic with greens
5 eggs 
1 small bunch fresh coriander leaves
10-15 fresh mint leaves
1 medium onion, roughly chopped
2-3 green chillies
1 inch ginger, sliced
2 tablespoons oil
1 teaspoon cumin seeds
2 spring onion bulbs, finely chopped
¼ teaspoon turmeric powder
Salt to taste
1 teaspoon coriander powder
½ teaspoon cumin powder
½ lemon
2 tablespoons chopped spring onion greens + for sprinkling
Red chilli flakes for sprinkling
Crushed black peppercorns for sprinkling
Toasted bread slices to serve 

Method

Finely chop green garlic with the greens. 
Put coriander leaves in a blender jar, add mint leaves, onion, green chillies and ginger and blend to a fine paste. 
Heat oil in a wide pan, add cumin seeds and let them change colour. Add spring onion bulbs, mix and sauté for 1-2 minutes. 
Add chopped green garlic with the greens, mix and sauté for 1-2 minutes. Add half the blended paste and mix well.  
Add turmeric powder, salt, coriander powder and cumin powder and mix well. Add the remaining blended paste and mix well. Rinse the blender jar with 1 cup water and add it into the pan. Mix well and cook for 1-2 minutes. 
Squeeze the juice of lemon and spring onion greens and mix well. Make 5 cavities at equidistance in the mixture.
Break 1 egg into each cavity. Cover and cook on medium heat for 3-4 minutes. 
Sprinkle red chilli flakes, crushed black peppercorns and spring onion greens over the eggs. 
Serve hot with toasted bread slices.
