Green Garlic Shakshuka Shakshuka is a simple dish that is said to have originated in Tunisia. Traditionally it has eggs gently poached eggs in a delicious chunky tomato and bell pepper sauce. But here we bring you this dish made with a twist. We have cooked the eggs in herby sauce made of fresh green garlic and a few spices. By Sanjeev Kapoor 30 Aug 2024 in Recipes Snack New Update Main ingredients Green garlic, Eggs, Fresh coriander leaves, Fresh mint leaves, Spring onion with greens, Turmeric powder, Coriander powder, Cumin powder, Lemon, Red chilli flakes Cuisine Fusion Course Snack Prep time 5-10 minutes Cook time 10-15 minutes Serve 4 Taste Savoury Level of cooking Easy Others Non vegetarian Ingredients 1 medium bunch green garlic with greens5 eggs 1 small bunch fresh coriander leaves10-15 fresh mint leaves1 medium onion, roughly chopped2-3 green chillies1 inch ginger, sliced2 tablespoons oil1 teaspoon cumin seeds2 spring onion bulbs, finely chopped¼ teaspoon turmeric powderSalt to taste1 teaspoon coriander powder½ teaspoon cumin powder½ lemon2 tablespoons chopped spring onion greens + for sprinklingRed chilli flakes for sprinklingCrushed black peppercorns for sprinklingToasted bread slices to serve Method Finely chop green garlic with the greens. Put coriander leaves in a blender jar, add mint leaves, onion, green chillies and ginger and blend to a fine paste. Heat oil in a wide pan, add cumin seeds and let them change colour. Add spring onion bulbs, mix and sauté for 1-2 minutes. Add chopped green garlic with the greens, mix and sauté for 1-2 minutes. Add half the blended paste and mix well. Add turmeric powder, salt, coriander powder and cumin powder and mix well. Add the remaining blended paste and mix well. Rinse the blender jar with 1 cup water and add it into the pan. Mix well and cook for 1-2 minutes. Squeeze the juice of lemon and spring onion greens and mix well. Make 5 cavities at equidistance in the mixture.Break 1 egg into each cavity. Cover and cook on medium heat for 3-4 minutes. Sprinkle red chilli flakes, crushed black peppercorns and spring onion greens over the eggs.
