Japanese Style Egg Sandwich Boiled eggs, mashed, mixed with Japanese mayonnaise, castor sugar and crushed black peppercorns, spread between two slices of bread to make simple yet delicious sandwiches. Once the water has come to a boil, cook the eggs for 8 minutes. Drain the eggs and soak in ice cold water for a few minutes. Drain them and peel the eggs. Roughly chop the eggs and transfer into a large bowl. Mash the eggs with a fork and add Japanese mayonnaise, castor sugar, black pepper powder and salt and mix till well combined. Apply butter generously on one side of each bread slice. Spread a portion of the eggs mixture on 4 slices. Cover them with the remaining bread slices with the buttered side facing down. Place the sandwiches on a plate, place another plate on it and press it lightly. Set aside for 5-10 minutes. Trim the edges of the sandwiches, cut them vertically in half and arrange on a serving plate.
