Kappa Sticks

Ingredients 

  • 400 grams tapioca (kappa)
  • Salt to taste
  • ½ teaspoon turmeric powder
  • Oil for deep frying
  • 12-15 curry leaves, fried
  • 1 teaspoon red chilli powder

Method

  1. Peel the tapioca and slice it thinly through a slicer. Arrange a few slices on top of each other and cut into thin sticks. Repeat the same with the remaining slices.
  2. Take salt in a bowl, add turmeric powder and ½ cup water and mix well.
  3. Heat sufficient oil in a kadai.
  4. Gently slide in the sticks and deep fry on medium heat till golden brown and crisp. Carefully drizzle 2-3 tablespoons of turmeric-salt water. Drain the sticks on absorbent paper. 
  5. Transfer the fried sticks into a large bowl, add fried curry leaves and red chilli powder and toss till well combined. 
  6. Transfer onto a serving plate and serve.
