Mushroom Hummus Toast

A three cuisine fusion where Mediterranean and Middle East meet Continental cuisine. Sourdough bread toasted in butter, slathered with hummus and topped with mushrooms is a delightful appetiser.

Ingredients

Method

  1. Slice button mushrooms. 
  2. Heat olive oil and butter in a non-stick pan add garlic. Pluck the leaves of thyme and add, mix and saute for 1 minute.
  3. Add mushrooms and mix. Add salt and crushed black peppercorns, mix well and saute  for 2-3 minutes. 
  4. Add Worcestershire sauce and mix well. Transfer on a plate.
  5. Heat some butter in the same pan. Place the sourdough bread slices and toast, turning sides till evenly golden on both sides.   
  6. Place the toasted bread slices on a serving plate. Apply some hummus on each slice, place a portion of mushrooms on to each bread slice. 
  7. Garnish with micro greens and dill sprigs and serve.
