Ingredients

  • 25-30 button mushrooms, chopped
  • 10-15 Pro V Regal Walnuts
  • 8 toasted slider buns
  • 2 tablespoons oil + for shallow frying
  • 1½ tablespoons chopped garlic
  • 1 medium onion, chopped
  • 2-3 fresh thyme sprigs
  • Crushed black peppercorns to taste
  • Salt to taste
  • ½ teaspoon paprika powder
  • 1 teaspoon Worcestershire sauce
  • ½ cup dried breadcrumbs
  • Mayonnaise as required
  • Lettuce leaves as required
  • Pickled purple cabbage as required
  • Tomato slices as required
  • Cheese slices as required

Method

  1. Transfer Pro V Regal Walnuts in a chopper and crush coarsely.
  2. Heat oil in a small nonstick pan. Add garlic, onion, mushrooms, crushed walnuts, thyme sprigs and sauté for 4-5 minutes.
  3. Add crushed black peppercorns, salt, paprika powder, Worcestershire sauce and cook for 2-3 minutes. Allow to cool.
  4. Add dried breadcrumbs and mix well.
  5. Divide the mixture into equal portions and shape into patties. 
  6. Heat sufficient oil in a shallow nonstick pan and shallow fry the patties till golden brown and crisp on both the sides.
  7. Arrange the lower halves of sliders buns on serving plate, spread mayonnaise and arrange lettuce leaves on top.
  8. Top up with pickled purple cabbage, tomato slices and cheese slices on top. Cover with remaining halves of the buns.
  9. Secure with wooden sticks and serve.
