By Sanjeev Kapoor 21 Sep 2024 in Recipes Pickle Jams Chutneys New Update Main ingredients Pumpkin, Turmeric powder, Red chilli powder, White pepper powder, Onion powder, Garlic powder, Black salt, Dried ginger powder, Sugar, Roasted cumin powder, Oil, Vinegar Cuisine Fusion Course Pickles Jams Chutneys Prep time 25-30 minutes Cook time 15-20 minutes Serve 4 Taste Savoury Level of cooking Easy Others Vegetarian Ingredients 500 grams red pumpkin, peeled, seeded and cut into 1 inch pieces A pinch of turmeric powder Salt to taste A pinch of red chilli powder White pepper powder to taste 1½ teaspoons onion powder 1 teaspoon garlic powder ¼ teaspoon black salt ¼ teaspoon dried ginger powder 2 teaspoons sugar A large pinch of roasted cumin powder 1 teaspoon oil 1 teaspoon vinegar Method Heat a non-stick pan, add pumpkin, 1½ cups water and turmeric powder, mix and cook on medium heat for 8-10 minutes. Allow to cool and transfer into a blender jar and grind to a fine paste. Heat a shallow non-stick pan and put the prepared puree into it. Add salt, red chilli powder, white pepper powder, onion powder, garlic powder, black salt, dried ginger powder and sugar and mix well. Cook on medium heat for 5-6 minutes or until the mixture is thick. Add roasted cumin powder, oil and vinegar and mix well.
