Ingredients

  • 200 grams granola bars
  • 1 cup whole wheat flour
  • 3 cups milk 
  • 4 eggs
  • 4 tablespoons melted butter
  • 6 tablespoons castor sugar
  • 1 teaspoon vanilla essence
  • 1 teaspoon baking powder
  • Butter for cooking + for garnish
  • Maple syrup to drizzle
  • Fresh blueberries for garnish
  • Fresh mint sprig for garnish

Method

  1. Break granola bars into pieces and transfer into a blender jar. Add milk, break eggs into the jar, add melted butter, castor sugar and vanilla essence and blend to a smooth mixture.
  2. Take whole wheat flour in a bowl. Add baking powder and mix.
  3. Add the blended mixture and mix well so as to ensure that there are no lumps.
  4. Heat a little butter in a non-stick shallow pan. Spread a ladleful of pancake batter evenly and cook on medium heat for 2 minutes or till the underside is golden brown. 
  5. Flip and cook on the other side for 2 minutes more.
  6. Similarly cook more pancakes with the remaining batter.
  7. Arrange the pancakes on a serving plate, place butter cubes on top and drizzle maple syrup.
  8. Garnish with fresh blueberries, mint sprig and serve hot.
