Ingredients
- 2 cups chopped fresh strawberries
- 1 cup quartered fresh strawberries
- 2 cups cream cheese
- 8 bread slices
- 1 cup sugar
- 4 fresh thyme sprigs
- 1 lemon, halved
- Sea salt to taste
- Crushed black peppercorns to taste
- Fresh mint leaves for garnish
Method
- Heat a non-stick pan, place the bread slices and toast till crisp. Transfer them onto a plate.
- Add strawberries to the same pan, add sugar and thyme, mix and cook for 4-5 minutes.
- Squeeze the juice of half lemon, mix cook for 3-4 minutes. Take the pan off the heat and set aside.
- Take cream cheese in a bowl, add sea salt and crushed black peppercorns and whisk well.
- Squeeze the juice of remaining lemon and whisk till light and fluffy.
- Arrange toasted bread slices on worktop and spread the cream cheese mixture generously.
- Top up with the strawberry mixture, garnish with mint leaves and serve.
