Ingredients list for Almond Cranberry Muffins
- ¾ cup Almonds meal
- ½ cup Cranberries dried
- 1 cup Refined flour (maida)
- 1 cup Butter
- 1 cup Castor sugar (caster sugar)
- 4 Eggs
- ½ teaspoon Vanilla essence
- 1 teaspoon Baking powder
- a pinch Salt
- ¼ cup Almonds slivered
Method
- Preheat oven to 180ºC.
- Cream together the butter and castor sugar in a bowl till light and fluffy.
- Add the eggs, one at a time and the vanilla essence and beat well.
- Sieve together the flour, baking powder and salt into the butter-sugar mixture and fold gently.
- Fold in the almond meal and cranberries.
- Scoop the mixture evenly into muffin moulds and sprinkle the slivered almonds on top.
- Put the moulds on a baking tray, place the tray in the preheated oven and bake for fifteen to twenty minutes. Remove from oven and demould.
- Serve warm.
