Ingredients list for Almond Cranberry Muffins

  • ¾ cup Almonds meal
  • ½ cup Cranberries dried
  • 1 cup Refined flour (maida)
  • 1 cup Butter
  • 1 cup Castor sugar (caster sugar)
  • 4 Eggs
  • ½ teaspoon Vanilla essence
  • 1 teaspoon Baking powder
  • a pinch Salt
  • ¼ cup Almonds slivered

Method

  1. Preheat oven to 180ºC.
  2. Cream together the butter and castor sugar in a bowl till light and fluffy.
  3. Add the eggs, one at a time and the vanilla essence and beat well.
  4. Sieve together the flour, baking powder and salt into the butter-sugar mixture and fold gently.
  5. Fold in the almond meal and cranberries.
  6. Scoop the mixture evenly into muffin moulds and sprinkle the slivered almonds on top.
  7. Put the moulds on a baking tray, place the tray in the preheated oven and bake for fifteen to twenty minutes. Remove from oven and demould.
  8. Serve warm.
