Ingredients list for Almond Flour Biscuits with Caramel Centre

  • 80 grams Almond flour
  • 75 grams Castor sugar (caster sugar)
  • 1 Egg
  • ½ teaspoon Almond essence
  • 2 tablespoons Refined flour (maida)
  • ¼ teaspoon Baking soda
  • a pinch Salt
  • for dusting Icing sugar
  • to grease Butter
  • Caramel -
  • a pinch Sea salt
  • 250 millilitres Double cream
  • 150 grams Butter
  • 400 grams Castor sugar (caster sugar)

Method

  1. Preheat the oven to 180ºC.
  2. Break egg, separate yolk and white and put them in separate bowls. Add sugar to the white gradually and beat with an electric beater till light and fluffy and soft peaks are formed.
  3. Add almond flour, refined flour, baking soda, salt and almond essence and mix well.
  4. Grease a baking tray with butter.
  5. Grease your palms with oil. Take small portions of the cookie batter, roll, flatten and place on the baking tray. Place the tray in the preheated oven and bake for ten to twelve minutes.
  6. To make caramel, put sugar in a non-stick pan and sprinkle a little water. Cook till sugar turns golden brown. Add butter and mix well. Add the double cream and sea salt and mix.Cook on medium heat till sauce thickens.
  7. Take one cookie, spread a little caramel sauce on the surface and cover with another cookie. Repeat this till all the cookies are used up.
  8. Place them on a serving plate and serve immediately.
