  • ½ cup Almonds
  • 1 cup Refined flour (maida)
  • ½ teaspoon Almond essence
  • 1 cup Unsalted butter
  • ½ cup Castor sugar (caster sugar)
  • ½ teaspoon Salt

Method

  1. Preheat oven to 180ºC. Line a baking tray with a parchment paper.
  2. Cream together the butter and castor sugar till light and fluffy.
  3. Add the almond essence and salt and beat. Add the flour and knead well.
  4. Add the ground almonds and mix till well incorporated into a dough.
  5. Divide the dough into twelve equal small portions and shape them into balls. Flatten them a little and place them one inch apart on the tray. Refrigerate for fifteen minutes.
