Till a few years ago, cauliflower used to be a vegetable that is only available during winter but of late cauliflower is available year around especially in big cities. Referred to as the aristocrat of the cabbage family, the flowers are also eaten raw at times. While buying, look for fresh cauliflowers with compact white heads and green fresh looking leaves. Avoid and reject any loose or spread out heads – they are a sure sign of over maturity.

Ingredients for Aloo Gobhi Adraki Recipe

  • Cauliflower 1 inch cubes 2 medium

  • Potatoes large florets 1 medium

  • Oil 3 tablespoons

  • Cumin seeds 1 teaspoon

  • Green chillies slit 3

  • Ginger paste 1 tablespoon

  • Turmeric powder 1/4 teaspoon

  • Red chilli powder 1/2 teaspoon

  • Salt to taste

  • Yogurt 2 tablespoons

  • Ginger cut into thin strips 2 inch pieces

  • Tomato chopped (optional) 1 large

  • Fresh coriander leaves chopped 2 tablespoons

Method

Step 1

Heat oil in a kadai and add cumin seeds. When they begin to change colour, add green chillies and ginger paste. Sauté for half a minute.

Step 2

Add potatoes and cauliflower and stir. Sauté for two to four minutes.

Step 3

Add turmeric powder, red chilli powder and salt and mix. Add yogurt and mix again, cover and cook on medium heat till done.

Step 4

Add ginger strips and stir well. Add tomato and stir. Garnish with coriander leaves and serve hot.
