Aloo Gobhi ki Sabzi

Aloo Gobhi ki Sabzi

Ingredients 

  • 3 large potatoes,peeled
  • 10-12 cauliflower florets
  • 1 1/2 inch roughly chopped ginger 
  • 8-10 garlic cloves
  • 3-4 green chillies
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 large onion, sliced
  • 2 medium tomatoes, sliced
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • 1 teaspoon coriander powder
  • Salt to taste
  • 1 tablespoon chopped coriander leaves 
  • Coriander leaves for garnish

Method

  1. Cut potatoes into big cubes. Put ginger, garlic and green chillies in a mortar and pound them with a pestle.
  2. Heat oil in an iron kadai, add cumin seeds and onion and sauté till golden brown. Add the pounded paste, mix well and saute till raw smells disappear.
  3. Add tomatoes, mix well and saute till tomatoes soften.
  4. Add turmeric powder, red chilli powder and coriander powder, mix well and saute for 1 minute. Add ¼ cup water and mix well. Add potatoes and cauliflower florets and mix well.
  5. Add salt and mix well. Add ¼ cup water, mix well, cover and cook for 8-10 minutes or till both potatoes and cauliflower are cooked. Add coriander leaves and mix well.
  6. Transfer into a serving bowl, garnish with some coriander leaves and serve hot.
