Ingredients list for Aloo Ki Launji

  • 7-8 Potatoes peeled
  • 4 tablespoons Onion seeds
  • 1/2 teaspoon Onion seeds (kalonji)
  • 1 teaspoon Ginger paste
  • 1 teaspoon Garlic paste
  • 1 tablespoon Tamarind paste
  • 2 teaspoons Jaggery (gur) grated
  • 1 teaspoon Red chilli powder
  • 1/4 teaspoon Turmeric powder
  • to taste Salt
  • 10-12 Black peppercorns
  • 2 Bay leaves
  • 2 teaspoons Coriander powder

  1. Heat mustard oil in a non-stick pan. Add bay leaves and sauté. Cut potatoes into wedges.
  2. Add onion seeds, black peppercorns, ginger paste, garlic paste to the pan and sauté till fragrant.
  3. Add potatoes and stir well. Add red chilli powder, coriander powder, turmeric powder, salt and mix. Add 1 cup water.
  4. Cover and cook till potatoes are cooked and softened.
  5. When the curry thickens add tamarind paste and jaggery and mix well. Simmer for a couple of minutes. Serve hot.
