Aloo Matar

Ingredients list for Aloo Matar

  • 4 medium Potatoes 1 cm cubes (boiled)
  • 1 1/4 cups Green peas shelled (blanched)
  • 2 tablespoons Oil
  • 1 teaspoon Cumin seeds
  • 1 inch piece Ginger juliennes
  • 1 Green chillies slit
  • 1 teaspoon Red chilli powder
  • 1/4 teaspoon Turmeric powder
  • 1 1/2 teaspoons Coriander powder
  • 1 teaspoon Garam masala powder
  • to taste Salt
  • 2 tablespoons Fresh coriander leaves

Method

  1. Heat oil in a pan over medium heat. Add cumin seeds and when it crackles add ginger and green chillies, stir-fry for a minute. Add green peas, potatoes and stir fry till for 2 minutes.
  2. Add red chilli powder, turmeric powder, and coriander powder and stir-fry at slow heat till the spices blend well with the vegetables.
  3. Add salt and garam masala powder and finish with chopped coriander leaves.
