Ingredients
- 4 medium potatoes, boiled, peeled and cut into pieces
- 1 1/2 cups chopped surti papdi
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 teaspoon carom seeds (ajwain)
- 1/4 cup finely chopped fresh green garlic
- 1 1/2 teaspoon red chilli powder
- 2 teaspoon dried mango powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala powder
- 2 teaspoons coriander powder
- 1/2 teaspoon cumin powder
- Salt to taste
- 1/2 small bunch of fresh coriander
- 3-4 spring onions bulbs, chopped
Method
- Heat oil in a non-stick pan. Add cumin seeds and carom seeds and sauté till fragrant. Add chopped green garlic and sauté for 30 seconds.
- Add surti papdi, mix and cook for a minute. Add potatoes, toss to mix and cook for 3-4 minutes.
- Finely chop coriander.
- Add chilli powder, dried mango powder, turmeric powder, garam masala powder, coriander powder, cumin powder and salt, mix and cook till surti papdi are done.
- Add spring onion bulbs and mix. Add chopped coriander and mix well.
- Serve hot.
