You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Anda Ghotala Recipe

  • Eggs boiled and peeled 4

  • Eggs 4

  • Butter 4 tablespo for toasting

  • Green garlic stalks chopped 4-5

  • Medium onions chopped 2 + to serve

  • Medium tomatoes chopped 2 + to serve

  • Salt to taste

  • Red chilli powder 1/2 teaspoon

  • Turmeric powder 1/4 teaspoon

  • Pav bhaji masala 1 tablespoon

  • Coriander powder 1 tablespoon

  • Garam masala powder 1 teaspoon

  • Fresh coriander leaves chopped 4 tablespo to garnish

  • Pavs 8 to serve

Method

Step 1

Heat 4 tbsps butter in a non-stick pan, add green garlic and sauté till golden brown. Add onion, mix and saute for 2-3 minutes or till golden.

Step 2

Add tomatoes and salt, mix and saute till tomatoes are pulpy.

Step 3

Add red chilli powder and turmeric powder and mix well. Add pav bhaji masala, coriander powder and garam masala, mix and continue to saute for 2-3 minutes.

Step 4

Add ½ cup water and mash the mixture well with a masher. Grate boiled eggs into the pan, add 1 cup water, mix well and cook for a minute.

Step 5

Break eggs into the mixture and mix them till they get scrambled. Add coriander leaves, mix well and take the pan off the heat.

Step 6

Heat butter on a non-stick tawa, place slit pavs and toast for a minute from both sides.

Step 7

Place pavs on serving plates with onion and tomato, transfer the anda ghotala into serving bowls, garnish with coriander leaves and serve hot.
