Ingredients list for Ande ka Halwa

  • 4 Egg (anda) yolks
  • 2 tablespoons Ghee
  • 1/4 cup + to garnish Mixed nuts , chopped
  • 2 tablespoons Semolina (sjji)
  • 1 teaspoon Vanilla essence
  • 1/2 cup Khoya , grated
  • 1/2 cup Castor sugar
  • a pinch Saffron
  • 1 teaspoon Green cardamom powder

Method

  1. Heat ghee in a non-stick pan, add mixed nuts and roast till fragrant. Add semolina, mix and roast for 1-2 minutes.
  2. Beat egg yolks. Add vanilla essence, beat again and add to the pan. Keep stirring.
  3. Add khoya and castor sugar, mix well and cook till the mixture thickens.
  4. Add saffron and cardamom powder and mix well.
  5. Transfer into a serving bowl, garnish with mixed nuts and serve hot.
