History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Anjeer Rabdi Recipe

  • Figs soaked and pureed 1/2 cup

  • Milk (reduced buffalo) 1/2 litres

  • Sugar 1/2 cup

  • Pistachios chopped 2 tablespoons

  • Almonds chopped 2 tablespoons

  • Pistachio slivers for garnish


Step 1

Heat the reduced milk in a non-stick pan till further reduced and thick. Stir continuously, scraping the sides of the pan.

Step 2

Add sugar, mix well and let it dissolve completely.

Step 3

Add fig puree, stir well to avoid lumps. Switch off heat, add chopped pistachios and almonds and mix well.

Step 4

Transfer the rabdi in a glass bowl and cool to room temperature. Refrigerate to chill.

Step 5

Garnish with pistachio slivers and serve chilled.
