Ingredients for Apricot Icecream Recipe

  • Dried apricots soaked in warm water 1 cup

  • Sugar 100 grams

  • Egg yolks 4

  • Cream 350 millilitres

  • For praline

  • Almonds chopped 100 grams

  • Sugar 100 grams

Method

Step 1

Puree apricots and put into a non-stick pan. Add sugar and cook, stirring, for five minutes.

Step 2

Put egg yolks in a bowl and beat well, add apricot puree and whisk till thick.

Step 3

Cool and add cream and mix well.

Step 4

Pour into an icecream box, close with the lid and freeze, beating at regular intervals (so as to prevent formation of ice crystals) until set.

Step 5

Serve with praline.

Step 6

To make praline, melt sugar in a heavy non-stick pan. Add almonds, mix and cook over a low heat for about ten minutes. Pour into an oiled tray and let it set.

Step 7

Crush with a rolling pin and sprinkle over ice cream before serving.
