Ingredients list for Avil Kesari

  • 2 cups Pressed Rice
  • Few strand Saffron
  • 1/2 cup Ghee
  • 10 Cashewnuts
  • 1/2 cup Raisins
  • 2 cups Sugar
  • 1/2 teaspoon Green cardamom powder

Method

  1. Soak saffron in a cup of hot water. Heat ghee in a pan and fry raisins and cashewnuts till golden. Drain and keep aside. Soak poha in water and drain immediately Heat the leftover ghee and sauté the poha till pink.
  2. Add saffron water and cook till nearly dry. Add sugar and continue to cook till completely dry. Add green cardamom powder, cashewnuts and raisins. Mix well and serve.
