Ingredients list for Babycorn Fritters
- 12-16 Babycorns
- ¼ cup Sugar
- 1 cup Garlic chopped
- 1 teaspoon Red chilli flakes
- + for dusting Refined flour (maida) 1 cup
- ½ cup Cornflour/ corn starch
- to taste Salt
- a pinch Crushed black peppercorns
- ½ cup Drinking soda
- to deep fry Oil
- 1 tablespoon Honey
Method
- Slit babycorn lengthwise into halves.
- To make sweet chilli sauce, heat some water in a non-stick pan. Add sugar, stir and let it melt. Add garlic, mix well and boil for a minute.
- Add ½ teaspoon chilli flakes, mix well and simmer till the sauce thickens.
- Combine refined flour and cornstarch in a bowl and mix. Add salt, crushed peppercorns and remaining chilli flakes and mix well. Add drinking soda and whisk well into a smooth batter.
- Heat sufficient oil in a pan.
- Add honey to the sauce, mix well and cook on high heat for a minute. Remove from heat and set aside.
- Dust babycorn in refined flour, dip in batter and deep-fry in hot oil till crisp and light brown. Drain on absorbent paper.
- Serve hot with prepared sweet chilli sauce.
