Hindi: baingan
Also called by names like aubergine and eggplant, this purple hued fleshy vegetable is a versatile thing and fun to cook with. Dish-up a very traditional bharta with it, bake a lasagna with parmesan and eggplant or just fry it for a great accompaniment with dal-chawal, brinjal is versatile. To choose one without seeds, pick the lighter one with a smooth shiny skin.

Ingredients for Baingan Curry Recipe

  • Brinjals 8 long

  • Spring Onion 5

  • Oil 2 tablespoons

  • Cumin seeds 1 teaspoon

  • Onion seeds (kalonji) 1/2 teaspoon

  • Salt to taste

  • Garlic chopped 1 tablespoon

  • Turmeric powder 1/4 teaspoon

  • Red chilli powder 1/2 teaspoon

  • Coriander powder 1 teaspoon

  • Cumin powder 1/2 teaspoon

  • Chopped tomatoes 1 cup

  • Gram flour (besan) 1 tablespoon

  • Yogurt 3 tablespoons


Step 1

Chop spring onion stems roughly. Halve the brinjals and chop them roughly.

Step 2

Heat oil in a non-stick pan, add cumin seeds and onions seeds and saute. Add brinjals and mix. Add salt and mix. Cover and cook for 2 minutes.

Step 3

Roughly chop spring onion bulbs.

Step 4

Add garlic, turmeric powder, red chilli powder, coriander powder and cumin powder to the pan and mix well.

Step 5

Add spring onion bulbs and stems and mix. Cover and cook for 2 minutes.

Step 6

Add tomatoes and mix. Cover and cook for 2 minutes.

Step 7

Add gram flour and mix. Add yogurt and mix. Cover and cook on medium heat for 10 minutes.

Step 8

Serve hot.
