Ingredients list for Baingan Walnut Rolls

  • 4 Brinjal
  • 1/2 teaspoon Walnut
  • 1 1/2 teaspoons Red chilli powder
  • to taste Salt
  • 3 tablespoons Oil
  • 8 cloves Garlic
  • 1/4 cup Walnuts
  • 3 tablespoons Fresh dill (suva) chopped
  • Juice of 1 lemon

Method

  1. Slice brinjals into thin vertical slices and keep them in a bowl.
  2. Mix turmeric powder, red chilli powder, salt and 2 tbsps oil and coat the brinjal slices with this mixture.
  3. To make the stuffing, grind together garlic, walnuts and 1 tbsp suva.
  4. Place the marinated brinjals on the griller, pour a little oil and cook, flipping sides, till golden.
  5. Heat the remaining oil in a non stick pan. Add the ground masala and a little water and mix well.
  6. Add the remaining suva, lemon juice, salt and mix well.Spread the stuffing on the brinjal slices and roll them.
  7. Arrange the rolls on a serving plate, garnish with some suva and serve.
