Ingredients list for Baked Beans Sandwich
- 1½ cups baked beans
- 12 white bread slices
- 2 teaspoons oil
- 2 teaspoons butter
- 1 medium onion, finely chopped
- ½ tablespoon garlic chopped
- ½ tablespoon ginger chopped
- Salt to taste
- 1 medium green capsicum finely chopped
- ¼ cup processed cheese grated
- 8 cheese slices
- Tomato ketchup to serve
Method
- Heat oil and butter in a non-sick pan, add onions and sauté till translucent. Add garlic and ginger, mix and sauté for 1 minute.
- Add salt and mix. Add capsicum, mix and sauté for ½ minute.
- Add baked beans, mix well and cook for a minute. Add cheese, mix and cook till it melts.
- Heat a sandwich griller.
- To make each sandwich, place a cheese slice on 4 bread slices. Top with a generous portion of bake beans mixture and cover with another bread slice. Place another cheese slice over the 2nd slice, spread a generous portion of baked beans mixture and cover with 3rd bread slice.
- Trim the edges. Grease the griller with a little butter, place 2 sandwiches at a time in the griller, cover and grill till grill marks appear on both sides.
- Cut each sandwich into triangles, place them on a serving platter and serve immediately with tomato ketchup.
