Ingredients list for Basic Cookie Dough
- 340 grams Refined flour (maida)
- 170 grams Rice flour
- 400 grams Butter
- 170 grams Icing sugar
- a few Vanilla essence
Method
- Preheat oven to 180°C.
- Take butter in a bowl. Add icing sugar and cream the mixture with an electric blender.
- Add vanilla essence and blend again.
- Sift together refined flour and rice flour into another bowl.
- Add flour mixture to butter-sugar mixture little by little and blend lightly till well mixed. Refrigerate the mixture for 1 hour.
- Divide dough into equal portions, shape them into balls and weigh them so that they are all of the same size. Pat them and shape into small cookies.
- Place cookies on a baking tray in a criss-cross way, place the tray in the preheated oven and bake for 20-25 minutes.
- Remove from heat, cool and serve or store in an airtight container for a week.
