Relish a salad platter of thinly sliced tomatoes, with chunks of mozzarella, a drizzle of olive oil, sliced black olives and basil leaves. Arrange in concentric circles on a nice white plate. The word relish is just perfect here. And not just salads, for all those rich and good-looking Indian preps, the very famous onion-tomato masala is a must! Then, there are soups, beverages (call for the Bloody Mary!), snacks and even desserts made of these plump red things. Even the green ones are in use today. Must say, terrific tomatoes!

Ingredients for Basmati Rice Indian Arrancini Recipe

  • Tomatoes chopped (For sauce) 1/2 cup

  • Boiled Rice (For Rice Mixture) 1 cup

  • Boiled Corn (For Rice Mixture) 2 tablespoons

  • Chopped Coriander (For Rice Mixture) 2 tablespoons

  • Chopped Green Chillies (For Rice Mixture) 1 teaspoon

  • Chopped Onions (For Rice Mixture) 1 1/2 tablespoons

  • Salt (For Rice Mixture) to taste

  • Roasted Cumin Powder (For Rice Mixture) 1 teaspoon

  • Red Chilli Powder (For Rice Mixture) 1 teaspoon

  • Grated cheese (For Rice Mixture) 2 tablespoons

  • Grated Paneer (For Rice Mixture) 2 tablespoons

  • Paneer (For Rice Mixture) 2 tablespoons

  • Bread Crumbs (For Rice Mixture) 2 tablespoons

  • For Sauce :

  • Chopped Onions 2 tablespoons

  • Chopped Coriander 1 1/2 tablespoons

  • Chopped Green Chillies 1 teaspoon

  • Chopped Garlic 1 teaspoon

  • Orange Zest 1 tablespoon

  • Sugar 1 tablespoon

  • Black Olives 4- 5

  • Lemon Juice 1

  • Salt to taste

  • Crushed Black Pepper to taste

  • For Batter :

  • Refined Flour 1/4 cup

  • Salt to taste

  • Crushed Black Pepper to taste

  • Red Chilli Powder 1 teaspoon

  • Refined Flour to dust

  • Bread Crumbs to coat t

  • Oil for frying

  • For Garnish : tablespoons

  • Lettuce Leaves 2 - 3 leav

  • Black Olives a few

Method

Step 1

To prepare rice mixture; in a bowl mash the boiled rice.

Step 2

Chop boiled corn and add to the rice mixture.

Step 3

Add the chopped coriander, chopped green chillies, chopped onions, salt, roasted cumin powder, red chilli powder, grated cheese, paneer, breadcrumbs and mix well.

Step 4

To prepare salsa sauce in a bowl add chopped tomatoes, chopped onions, chopped coriander, chopped green chillies, chopped garlic, orange zest, sugar and mix well.

Step 5

Chop black olives and add to the bowl. Further add lemon juice, salt, crushed black pepper and keep it aside.

Step 6

In a bowl add refined flour, salt, crushed black pepper, red chilli powder, water and prepare the batter.

Step 7

Make balls out of the rice mixture and dust refined flour on it.

Step 8

Put the prepared balls in the batter and coat them with breadcrumbs.

Step 9

Deep fry the prepared croquets in hot oil until golden brown and remove them on a tissue paper. Serve salsa sauce in a bowl.

Step 10

For garnish trim the lettuce leaves and place them on the plate.

Step 11

Keep the prepared croquets on the plate. Arrange black olives on the skewers and place on the croquets.

Step 12

Drizzle salsa sauce and rice croquets are ready to serve.
