How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Prep Time : 6-10 minutes

Cook time : 11-15 minutes

Serve : 4

Ingredients for Bhakri Recipe

  • Rice flour 2 cups + for dusting

  • Drumstick leaves blanched and drained 1 cup

  • Bhuna masala 50 grams

  • Salt to taste

  • White butter as required

Method

Step 1

Finely chop drumstick leaves and place them in a bowl. Add rice flour, bhuna masala, salt and mix well.

Step 2

Add hot water as required and knead into soft dough. Cover with a damp cloth and rest for a couple of minutes.

Step 3

Heat a non-stick tawa.

Step 4

Divide the dough into equal sized balls. Dust each of them with a little dry rice flour and flatten into small bhakris.

Step 5

Place one bhakri at a time on hot tawa and cook, turning sides, till evenly golden on both sides.

Step 6

Transfer the bhakris on a serving plate. Put a dollop of white butter on each bhakri and serve hot.
