Broccoli and Almond Salad

Blanched broccoli tossed in a tangy lemon dressing, topped with lightly roasted almonds for a crunchy finish. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 1 medium broccoli, separated into florets and blanched
  • 15-20 almonds, blanched and peeled
  • Juice of 1 lemon
  • Salt to taste
  • Crushed black peppercorns to taste
  • 2 teaspoons olive oil

Method

  1. For dressing, take lemon juice in a bowl. Add salt and crushed peppercorns. Add olive oil slowly and keep whisking.
  2. Cut almonds into halves.
  3. Heat a non-stick pan. Add almonds and roast till light golden. Remove from heat and cool to room temperature.
  4. Add dressing to broccoli florets and toss. Transfer in a serving bowl.
  5. Add roasted almonds on top and serve immediately.
