Ingredients list for Brown Rice Vegetable Pilaf

  • 2 cups Brown basmati rice
  • 2 medium Carrots diced
  • 1 Bay leaf
  • 2-3 Cloves
  • 1 teaspoon Cumin seeds
  • 1 inch stick Cinnamon
  • to taste Salt
  • 1/2 cup Green peas shelled
  • 2 tablespoons Rice bran oil
  • 10-12 French beans chopped
  • 1/4 medium Cauliflower separated into florets
  • 6-7 medium Button mushrooms halved
  • 2 Green chillies slit
  • 100 grams Tofu cubed

Method

  1. Soak brown rice in four to five cups of water for one hour. Drain and set aside.
  2. Heat rice bran oil in a deep pan. Add bay leaf, cloves, cumin seeds and cinnamon.
  3. Add drained rice and salt and sauté for one to two minutes. Add five cups of water. Bring to a boil.
  4. Add , cauliflower, mushrooms, green chillies and tofu. Stir green peas, carrots, French beansand mix. Bring to a boil. Reduce heat to low, cover and cook till done. Serve hot.
