How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Brown Rice Vegetables Recipe

  • Brown Basmati rice 2 cups

  • Shelled green peas 1/2 cup

  • Carrots cut into small cubes 2 medium

  • French beans chopped 10-12

  • Cauliflower separated into florets 1/4 medium

  • Button mushrooms halved 6-7

  • Silken beancurd (tofu) cut into ½ inch cubes 100 grams

  • Oil 2 tablespoons

  • Bay leaf 1

  • Clove 2-3

  • Cumin seeds 1 teaspoon

  • Cinnamon 2 inch sticks

  • Onion sliced 2 medium

  • Turmeric powder 1/4 teaspoon

  • Salt to taste

  • Green chilli slit 4

  • Garam masala powder 1/2 teaspoon

Method

Step 1

Soak the brown rice in four or five cups of water for one hour. Drain and set aside. Heat the oil in a pressure cooker; add the bay leaf, cloves, cumin seeds and cinnamon.

Step 2

When they begin to change colour, add the onions and sauté till light brown. Add the drained rice, turmeric powder and salt and sauté for one or two minutes. Add five cups of water and bring to a boil. Seal the cooker with the lid and cook over medium heat till the pressure is released four times (four whistles).

Step 3

Remove the lid when pressure reduces. Stir in the green peas, carrots, French beans, cauliflower, mushrooms, green chillies and garam masala powder. Cover again and cook over medium heat till the pressure is released twice (two whistles). Serve hot, garnished with tofu.
