Bruschetta

Popular Italian snack – toasted French bread slices topped with tomatoes and olives and served. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Bruschetta

  • 1 French bread
  • for drizzl Olive oil
  • 10-12 Garlic cloves chopped
  • 10-12 Cherry tomatoes cut into halves
  • 4-5 Black olives pitted
  • 4-5 Green olives pitted
  • 1/2 cup Mozzarella cheese grated
  • 8-10 + for Basil leaves
  • to taste Salt
  • 1/2 teaspoon Crushed black peppercorns

Method

  1. Slice bread diagonally, drizzle some olive oil and add garlic on top.
  2. Heat a non-stick tawa. Place the bread garlic side down on it and toast till done. Flip, drizzle some more olive oil and toast till the other side is also evenly done.
  3. Combine cherry tomatoes, black olives, green olives, mozzarella cheese, roughly torn basil leaves, salt, crushed peppercorns in a bowl and mix well. Drizzle some more olive oil and mix well.
  4. Place a spoonful of the cheese mixture on each toasted bread.
  5. Place the prepared bread on a serving dish, garnish with basil leaves and serve immediately.
