Ingredients list for Caramelised Pumpkin Chicken Curry

  • 200 grams Red pumpkin peeled and sliced thinly
  • 4 Boneless chicken breasts
  • 4 tablespoons Oil
  • to taste Salt
  • 1 1/2 tablespoons Ginger-garlic paste
  • 1 teaspoon Roasted cumin powder
  • 1/2 cup Tomato puree
  • 1/2 Green chilli
  • 1/2 teaspoon Garam masala powder
  • for garnish A fresh mint sprig

Method

  1. Heat 2 tbsps oil in a non-stick pan, add pumpkin slices and little salt, mix, cover and cook on high heat till pumpkin is cooked and caramelises.
  2. Heat 2 tbsps oil in another non-stick pan. Cut chicken into medium sized pieces and put in this pan and sauté for 2 minutes. Add ginger-garlic paste and mix. Cover and cook for 2 minutes.
  3. Add cumin powder to the chicken and mix. Cover and cook.
  4. When the pumpkin gets slightly burnt, put it into a mixer jar. Add tomato puree and grind. Add green chilli and grind again.
  5. Add ½ cup water to the chicken and mix. Add the pumpkin paste and mix. Add salt and garam masala powder and mix. Cover and cook on low heat for 5-7 minutes or till chicken is done.
  6. Transfer into a serving bowl and serve garnished with fresh mint sprig.
