Some say Chinese cuisine is 400,000 years old going back to the Peking Man and his use of fire. Some other accounts of the history of Chinese cuisine takes the beginning to the Chinese stone age. However today Chinese cuisine enjoys the distinction of being the most popular in the world.
All this furore about Chinese food can make one wonder what is so special about this cuisine.  To put it in one word it is wholesome.  It has the characteristics of being nutritious, economical, balanced and delicious. It cannot be gainsaid that Chinese food is popular the world over and it can be adapted into our modern lifestyles as the strong link between diet and health of body, mind and spirit is epitomized in Chinese cookery. We all desire harmony in our lives and this works on the ancient Taoist principle of Yin and Yang in which balance and contrast are the key. Each Chinese dish reflects a balance of taste, texture, aroma and colour. Be it sweet, sour, pungent, hot, salty or spicy – all the six basic flavours are incorporated deftly in all Chinese dishes.

Ingredients for Cashew Chicken Recipe

  • Cashewnuts roasted 1/2 cup

  • Boneless chicken breast 4

  • Onion 4 medium

  • Dry red chilies 4-5

  • Garlic 10-12 cloves

  • Oil 4 tablespoons

  • Red capsicums 1/2

  • Oyster sauce 3 teaspoon

  • Dark soy sauce 1 teaspoon

  • Sugar 1/2 teaspoon

  • Salt to taste

  • Cornflour/ corn starch 1 teaspoon

Method

Step 1

Cut onions into large chunks and separate layers. Chop red chillies and garlic coarsely in a chopper.

Step 2

Heat 2 tsps oil in a non-stick wok, add onions and sauté. Cut red capsicum into ½ inch pieces and add.

Step 3

Add cashewnuts and toss. Transfer the mixture into a bowl and set aside.

Step 4

Heat 2 tsps oil in the non-stick wok. Cut chicken into ½ inch pieces and add.

Step 5

Sauté on high heat for 2-3 minutes, tossing frequently so that they get cooked evenly all over.

Step 6

Add chilli-garlic mixture and toss. Add oyster sauce, dark soy sauce, sugar and salt and mix.

Step 7

Cook for 2 minutes. Mix cornflour in ¼ cup water and add to the wok and mix well.

Step 8

Add the onions-red capsicum-cashewnut mixture and mix. Serve hot.
