Cauliflower Chickpea Tikki

Cauliflower and chickpea mixed with some masalas and cheese, shaped into tikki and shallow fried. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Cauliflower Chickpea Tikki

  • ½ medium Cauliflower grated
  • 1 cup Chickpeas (kabuli chana) soaked overnight, boiled
  • to taste Salt
  • 1 teaspoon Red chilli powder
  • 1 tablespoon Garlic chopped
  • 1 medium Onion finely chopped
  • ½ medium Red capsicum finely chopped
  • 1 teaspoon Cumin seeds
  • ¼ cup Processed cheese grated
  • for coating Bread crumbs pankao
  • for shallow frying Oil
  • 2-3 tablespoons Tomato ketchup
  • to sprinkle Chaat masala
  • for garnish coriander leaves chopped
  • for garnish micro greens mixed

Method

  1. Take chickpeas in a bowl and mash. Add cauliflower, salt, chilli powder, garlic, onion, red capsicum and cumin seeds and mix. Add cheese and mix well.
  2. Divide the mixture into equal portions and shape into tikkis.
  3. Coat the tikkis with breadcrumbs.
  4. Heat some oil in a non-stick pan. Shallow-fry tikkis from both sides till golden and crisp. Drain on absorbent paper.
  5. Pour tomato ketchup in a serving bowl and pile fried tikkis on top. Sprinkle some chaat masala over them and garnish with some coriander leaves and micro greens.
  6. Serve hot.
