Ingredients list for Cheesy Chicken with Grilled Peppers and Onion

  • 2 Boneless chicken breasts
  • 2 teaspoons Parmesan cheese powder
  • ¼ cup Processed cheese grated
  • 1 cup Capsicum diced
  • 1 medium Onion quartered and layers separated
  • 1 tablespoon Garlic chopped
  • a pinch Red chilli flakes 1 teaspoon +
  • 1 teaspoon Dried mixed herbs
  • to taste Crushed black peppercorns
  • 1 tablespoon Fresh cream
  • 1 teaspoon Mayonnaise
  • to taste Salt
  • 3 tablespoons + for grilling Olive oil
  • 1 tablespoon Bread crumbs
  • for garnishing Fresh coriander leaves chopped

Method

  1. Put garlic, Parmesan cheese, processed cheese, 1 teaspoon red chilli flakes, mixed herbs, crushed peppercorns, cream, mayonnaise and salt in a bowl. Add 3 tablespoons olive oil slowly and mix well. Add breadcrumbs and mix again.
  2. Add chicken breasts and mix well. Set aside to marinate for 20-25 minutes.
  3. Preheat oven to 180°C.
  4. Place marinated chicken on a baking tray. Pour leftover marinade on top and place the tray in the preheated oven. Bake for 12-15 minutes.
  5. Heat some olive oil in a non-stick grill pan. Add onion, capsicums, salt, crushed peppercorns and pinch of red chilli flakes on top and grill till evenly done.
  6. Place chicken on a serving plate. Place the grilled vegetables along and serve immediately garnished with coriander leaves.
