Ever wondered why the phrase “say cheese” is used just before a photograph is clicked? Simply because ‘cheese’ makes one smile! Not only the word but cheese as a food makes a lot of palates happy. It is an inexpensive, versatile and nourishing food. We have our very own Indian version as well as the ones made from soy milk that are even healthier. Whichever form, this is one food that is loved by one and all!

Ingredients for Cheesy Jacket Potatoes Recipe

  • Processed cheese as required

  • Potatoes medium 4 medium

  • Butter 3 tablespoons

  • Spring onion bulbs chopped 2-3

  • Corn kernels 1/2 cup

  • Crushed black peppercorns to taste

  • Salt to taste

  • Refined flour (maida) 2 tablespoons

  • Milk 1 cup

  • Spring onion greens Chopped for garnishing

Method

Step 1

Preheat oven at 180ºC.

Step 2

Halve the potatoes. Scoop out the flesh and reserve alongwith the shells.

Step 3

Heat 1 tablespoon butter in a non-stick pan. Add spring onion bulbs and corn kernels and mix well. Add crushed peppercorns and salt, mix and cook for a minute.

Step 4

Add the reserved potato flesh and crushed peppercorns and mix well. Remove from heat.

Step 5

To prepare white sauce, heat remaining butter in a non-stick pan. Add flour, mix and cook for a minute. Switch off the heat, add milk and mix well. Turn on the heat and sauté for 5-7 minutes. Add crushed peppercorns and salt, mix and cook for a minute. Switch off heat and set aside.

Step 6

Add the prepared white sauce to the prepared potato mixture and mix well.

Step 7

Place the potato shells on a baking tray.Fill each with the prepared potato-white sauce mixture. Grate some cheese over each potato jacket.

Step 8

Put the baking tray in preheated oven and bake for 10-14 minutes.

Step 9

Serve hot garnished with spring onion greens.
