Italian cuisine has developed through centuries of social and political changes, with roots stretching to antiquity.  Italian cuisine is simple and a number of dishes having only four to eight ingredients.  They rely mostly on the quality of ingredients rather than elaborate preparation.
Noteworthy changes in Italian cuisine happened with the discovery of the New World and the introduction of potatoes, tomatoes, bell peppers and maize, which are now an integral part of this cuisine.  Italian cuisine is known for its regional diversity each with a distinct taste.  This cuisine today is probably one of the most popular in the world.

Ingredients for Cheesy Penne Pasta Recipe

  • Penne pasta , boiled 2 cups

  • Cheese sauce 1 cup

  • Olive oil 1 tablespoon

  • Garlic , chopped 1 tablespoon

  • Onion , finely chopped 1 medium

  • Tomato concasse 1/2 cup

  • Salt to taste

  • Paprika 1/2 teaspoon

  • Crushed black peppercorns to taste

  • Sugar 1/2 teaspoon

  • Yellow zucchini , sliced and halved 1/2 small

  • Green zucchini , sliced and halved 1/2 small

  • Red capsicum , cut into triangles 1 small

  • Fresh basil leaves 5-6 + for greasing

  • Parmesan cheese shavings for garnishing


Step 1

Heat olive oil in a non-stick pan, add garlic and onion and sauté till translucent.

Step 2

Add tomato concasse, mix and saute for 2 minutes. Add salt, paprika, crushed peppercorns and sugar, mix well and saute for a minute.

Step 3

Add yellow and green zucchini and red capsicum and mix well. Add ½ cup water, mix and cook for 2 minutes. Add tear basil leaves, add to the pan and mix well.

Step 4

Add cheese sauce and mix well. Add pasta and mix well. Add parmesan cheese shavings and mix.

Step 5

Transfer into a serving bowl, garnish with some cheese shavings and a basil leaf and serve hot with garlic bread.
