Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Chicken Pie With Tomatoes And Olives Recipe

  • Chicken Mince minced 400 grams

  • Tomato blanched and peeled 2 medium

  • black and green olives chopped 12

  • Olive oil 4 tablespoons

  • Garlic cloves chopped 8

  • Onion chopped 1 medium

  • Fresh oregano 1 teaspoon

  • Brinjal sliced 1

  • Salt to taste

  • Butter 30 grams

  • Double cream 100 millilitres

  • Potatoes mashed 2 cups

  • Crushed black peppercorns to taste

Method

Step 1

Preheat oven at 180° C. Heat 1 tbsp olive oil in a non stick pan.

Step 2

Add garlic and saute for 1 minute. Add onion and sauté for 3 minutes

Step 3

Add fresh oregano and mix well. Chop tomatoes.

Step 4

Heat 1 tbsp olive oil in another non stick pan, add brinjal and shallow fry.

Step 5

Add chicken mince, tomatoes and salt to the first pan and sauté for 5 minutes.

Step 6

Heat butter in a third non stick pan. Add cream and mashed potatoes to it. Add salt and crushed black peppercorns.

Step 7

Put half the chicken mixture in a baking dish. Top it with brinjal slices.

Step 8

Cover with remaining chicken mixture. Sprinkle half the olives and top this layer with creamy potato sauce.

Step 9

Drizzle remaining olive oil. Sprinkle remaining olives on top. Bake in the preheated oven for 10 minutes. Serve hot.
