Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Chicken Souvlaki With Tzaziki Recipe

  • Boneless chicken cut into thick strips 800 grams

  • Dry red wine 1 cup

  • Garlic minced 6 cloves

  • Dry oregano 1 teaspoon

  • Lemon rind grated 3 teaspoons

  • Olive oil for sealing and brushing

  • Yellow capsicum 1 1/2 inch cubes 2 large

  • Cherry tomatoes wash and wiped 10-12

  • Yogurt 2 cups

  • Cucumber grated 1/2 medium

  • Olive oil 3 tablespoons

  • Salt

Method

Step 1

Prepare the tzaziki a few hours before serving because the flavours need time to blend. Place the chicken in a large bowl.

Step 2

Pour in the wine and sprinkle minced garlic of 4 cloves and oregano. Mix in the lemon rind and drizzle with olive oil. Cover tightly with plastic wrap and refrigerate for half an hour.

Step 3

Remove about thirty minutes before serving. Thread the chicken strips along with yellow capsicum cubes and cherry tomatoes onto satay sticks in this order: cherry tomato, chicken strip, yellow capsicum. Repeat with other satays. Brush with a little olive oil.

Step 4

Grill on medium heat till chicken is done. Serve on a bed of steamed rice topped with lots of tzaziki. To make tzaziki: Line a colander or sieve with cheesecloth (or gauze) and set it over a bowl.

Step 5

Pour in the yogurt and allow it to drip for an hour or so. After the yogurt has drained combine it, in a small bowl, with the cucumber and remaining garlic. Cover the bowl tightly with plastic wrap and refrigerate until just before serving.

Step 6

While the chicken is cooking, drizzle the olive oil over the surface of the prepared tzaziki and without stirring, sprinkle on the salt. It needs no mixing, as it will be done anyway when you dollop it onto your souvlaki.
