Ingredients list for Chicken Tequila Pasta
- 400 grams Chicken cut into ½ inch cubes
- 3 tablespoons Fettucini
- to taste Salt
- 3 tablespoon Butter
- 2 tablespoons Cilantro chopped
- 2 tablespoons Garlic crushed
- 2 tablespoons Jalapeno chopped
- 1/2 cup Vegetable stock
- 2 tablespoons Lime juice
- 1/4 medium Onion thickly sliced
- 1/2 medium Red bell pepper cut into juliennes
- 4 cups Fettuccine cooked
Method
- Marinate the chicken with soya sauce and salt and refrigerate it for half an hour.
- Heat one tablespoon butter in a non stick pan add cilentro, garlic and jalapenos and saute for two minutes.
- Add half cup vegetable stock and lemon juice and bring to boil.
- Remove and set aside and grind to a smooth paste.
- Heat the remaining butter in another non stick pan, add onions and saute till light brown.
- Add bell pepper, saute for a minute. Add the marinated chicken toss for five minutes.
- Add tequilla, pasta and salt and allow the mixture to boil.
- Add the above cilentro sauce and let it simmer for five minutes on low heat.
- Remove from heat and serve hot.
