By Sanjeev Kapoor 22 Apr 2016 in Recipes Course New Update Main Ingredients Boneless Chicken Breasts, Pineapple Cuisine Fusion Course Main Course Chicken Prep Time 0-5 minutes Cook time 26-30 minutes Serve 4 Taste Tangy Level of Cooking Moderate Others Non Veg Ingredients list for Chicken with Ginger Pineapple Sauce 2 Boneless Chicken Breasts halved 1/2 cup Pineapple chopped 1 Ginger grated 2 cups Pineapple juice to taste Salt to taste Black pepper powder A few saffron strands Oil for grilling for garnishing Ginger strips Method Mix chicken breasts with salt and pepper powder and set aside to marinate for ten to fifteen minutes. Heat a non-stick pan, add ginger and roast for a minute. Add pineapple, pineapple juice and saffron, mix well and cook till the moisture reduces slightly. Add salt and black pepper powder and mix well. Switch off heat, cool and grind it to a smooth puree. Heat some oil in a non-stick grill pan. Place marinated chicken on it and grill, turning sides, till chicken is cooked and evenly done on both sides. Place grilled chicken on a serving plate and pour prepared sauce over. Garnish with ginger strips and serve immediately.
