Ingredients

  • 6 slices white bread
  • 6 medium tomatoes, quartered                      
  • 1 medium cucumber, roughly chopped                                  
  • 3-4 garlic cloves, chopped                                         
  • ½ cup olive oil
  • Salt to taste
  • Crushed black peppercorns to taste                                                               
  • 1 medium green capsicum, seeded and roughly chopped                 
  • 2 tablespoons wine vinegar                                                                
  • For the garnish    
  • 1 slice white bread, cut into ½-inch cubes
  • 1 small green capsicum, chopped                               
  • 1 small onion, chopped                                              

Method 

  1. Discard edges of bread slices, break into pieces and place in a bowl. Add water and soak the bread pieces for 5 minutes.
  2. Combine tomatoes, cucumber, garlic, soaked bread pieces, olive oil, salt, crushed peppercorns and water in a blender. Blend well.
  3. Add capsicum and vinegar and blend again.
  4. Strain the soup into a bowl and chill in a refrigerator.
  5. Pour the soup into individual Martini glasses. Garnish with bread cubes, chopped capsicum and chopped onion. Serve chilled.
