Ingredients for Chilli And Garlic Crunchy Rice Recipe

  • Dried Red Chillies 8

  • Garlic 10 cloves

  • Basmati rice cooked 3 cups

  • Oil 2 tablespoons

  • Ginger chopped 1 1/2 inch piece

  • Green chillies chopped 2

  • Celery chopped 2 inch stalk

  • Cabbage shredded 1/4 small

  • Carrot grated 1 medium

  • Bean sprouts 1/2 cup

  • Soy sauce 1 tablespoon

  • Red chilli sauce 1/2 teaspoon

  • Salt to taste

  • White pepper powder to taste

  • Vinegar 1/2 tablespoon

  • Spring onion greens chopped 2-3 stalks


Step 1

Soak red chillies in warm water for fifteen to twenty minutes. Remove seeds and grind to a fine paste with eight garlic cloves. Crush the remaining garlic cloves.

Step 2

Heat oil in a non stick pan; add crushed garlic, ginger, green chillies, celery and sauté for one minute. Add cabbage, carrot, sprouts and toss well.

Step 3

Add the cooked rice and toss. Add soy sauce, chilli sauce, prepared paste, salt, white pepper powder and toss well. Cook for four to five minutes tossing at regular intervals.

Step 4

Add vinegar and mix well. Serve hot garnished with spring onion greens.
