Ingredients list for Chilli Hoppers
- 16 small Bhavnagri green chillies
- 1 cup Mozzarella cheese grated
- 4-5 cloves Garlic chopped
- 1 teaspoon Red chilli flakes
- 5-6 Black peppercorns crushed
- 2 tablespoons Fresh parsley chopped
- 3/4 cup Refined flour (maida)
- 1 cup Cornflour/ corn starch
- 1/2 teaspoon Baking powder
- to taste Salt
- to deep fry Oil
Method
- Mix cheese, chopped garlic, crushed red chillies, crushed black peppercorns, chopped fresh parsley in a bowl.
- Slit the chillies and remove the seeds. Stuff them with the cheese mixture. Set aside.
- Mix refined flour, cornflour, baking powder and salt in a bowl. Add sufficient water and whisk to make a smooth and thick batter. Rest the batter for ten minutes.
- Heat sufficient oil in a deep pan. Dip each stuffed chilli in the flour batter and deep-fry till crisp. They will not turn brown but remain white.
- Drain onto an absorbent paper and serve hot.
