Ingredients list for Chilli Hoppers

  • 16 small Bhavnagri green chillies
  • 1 cup Mozzarella cheese grated
  • 4-5 cloves Garlic chopped
  • 1 teaspoon Red chilli flakes
  • 5-6 Black peppercorns crushed
  • 2 tablespoons Fresh parsley chopped
  • 3/4 cup Refined flour (maida)
  • 1 cup Cornflour/ corn starch
  • 1/2 teaspoon Baking powder
  • to taste Salt
  • to deep fry Oil

Method

  1. Mix cheese, chopped garlic, crushed red chillies, crushed black peppercorns, chopped fresh parsley in a bowl.
  2. Slit the chillies and remove the seeds. Stuff them with the cheese mixture. Set aside.
  3. Mix refined flour, cornflour, baking powder and salt in a bowl. Add sufficient water and whisk to make a smooth and thick batter. Rest the batter for ten minutes.
  4. Heat sufficient oil in a deep pan. Dip each stuffed chilli in the flour batter and deep-fry till crisp. They will not turn brown but remain white.
  5. Drain onto an absorbent paper and serve hot.
