Ingredients for Colourful Vegetable Basket Recipe

  • Green capsicum cut into two and deseeded 2 large

  • Tomato chopped 1 small

  • Paneer (cottage cheese) cut into small pieces 500 grams

  • Green peas 1/2 cup

  • French beans chopped 50 grams

  • Carrot chopped 1 medium

  • Potato boiled and cut into small cubes 1

  • Oil 2 tablespoon

  • Cinnamon 2 small st

  • Green chillies 2

  • Cumin powder 1/2 tablespoon

  • Coriander powder 1/2 tablespoon

  • Garam masala 1 teaspoon

  • Turmeric powder a pinch

  • Salt to taste

  • coriander leaves for garnish


Step 1

Heat oil in a non stick pan; add cinnamon sticks and green chillies, sauté a little. Add tomato, green peas, French beans, carrot and potatoes. Saute for a while. Add cottage cheese and mix well. Add ½ cup water and allow the mixture to boil.

Step 2

Add cumin powder, coriander powder, garam masala, turmeric powder and salt. Mix well. Add the coriander leaves and mix well. Remove from heat and fill the mixture into the capsicum halves.

Step 3

Place the capsicum in the same pan and cover and cook for two minutes till soft. Remove on a serving plate and serve with roti.
